Vintage and Vinification:
The 2019 vintage derives from 24-30 year-old Cabernet Sauvignon vines, producing a yield of 5 tons per hectare. Harvested in March 2019 at full seed ripeness, the grapes underwent 2-3 days of cold maceration before being fermented uncrushed in open fermenters. This method, combined with the natural yeasts and a lack of mechanical crushing, ensures a gentler extraction of flavors and tannins. The fermentation process was carefully managed with punch-downs and pump-overs performed three times daily for approximately 15 days.
Maturation and Filtration:
The wine matured in both new and second fill French oak barrels from Seguin Moreau, enhancing its complexity without overpowering the fruit. True to Springfield’s commitment to natural processes, the wine was bottled without filtration or stabilization, aiming to preserve its authentic essence and potentially develop sediment as it ages.
Tasting Notes:
The Springfield Whole Berry is characterized by its velvety texture and softer tannins, typical of the whole berry fermentation process. The palate offers a symphony of dark fruits, complemented by subtle oak influences that lend spice and depth.
