Winemaking:
The grapes were handpicked and immediately transported to the cellar for processing. Light whole bunch pressing was employed to optimize flavor and color extraction. The juice was settled for 24 hours before being transferred to stainless steel tanks for fermentation. Cold alcoholic fermentation was utilized to preserve the aromatic qualities of the wine. Post-fermentation lees stirring for three months enhanced the wine’s mouthfeel, adding a layer of complexity.
