Viticulture:
All grape varieties are hand-picked from low yielding dryland vines, ensuring concentrated flavors and high-quality fruit.
Winemaking:
After meticulous sorting and destemming, the grape juice and skins undergo cold maceration at temperatures between 5-8°C for up to 4 days to enhance color and flavor extraction. Fermentation occurs in open-top fermentation vessels, with the rising cap punched down every 4-6 hours to ensure maximum skin contact. Following primary fermentation, malolactic fermentation takes place in 300-liter barrels, where the wine also matures.

Tasting Notes:
Aroma: The nose is a complex bouquet of dark berries, black cherries, and subtle floral notes, with a hint of spicy pepper and earthy undertones.
Palate: On the palate, the wine is rich and full-bodied, with layers of ripe red and black fruit flavors. The integration of the various grape varieties adds depth and complexity, with the Shiraz providing spice and structure, the Cinsaut contributing elegance and finesse, the Pinotage adding a unique fruitiness, the Mourvedre lending earthiness and robustness, and the Malbec offering additional body and richness.
Finish: The finish is long and persistent, with well-integrated tannins and a balanced acidity that leaves a refreshing aftertaste.
Food Pairing:
This versatile cuvée pairs beautifully with a range of dishes, from grilled meats and hearty stews to rich pastas and mature cheeses. It’s also an excellent match for game dishes and flavorful vegetarian meals.
Serving Suggestions:
Serve at a temperature of around 16-18°C (60-64°F) to fully appreciate the wine’s complexity and depth. Decanting for about an hour before serving can help to open up the aromas and flavors.
