Terroir & Viticulture:
The Semillon grapes originate from a particularly stony section of Helderfontein, identified for its ability to restrain vine vigor and enhance grape quality. The dry conditions of the 2019 vintage ensured the grapes were in pristine, rot-free condition. The Sauvignon Blanc grapes, from clones SB316 and SB11, were sourced from Elgin Orchards and Wallovale Vineyards, where an open canopy management technique was employed. Strategic leaf plucking post-berry set helped enhance the aromatic fruit profiles of the grapes.

Vinification:
The vinification process involved meticulous attention to detail. Both Sauvignon Blanc clones, CL 317 and CL 318, and Semillon, CL GD1, were hand-harvested in mid-March. The grapes underwent destemming, crushing, and 8 hours of skin contact under dry ice to enhance flavor extraction. Following a soft press, the juice was naturally fermented at low temperatures (12 – 14°C) to preserve delicate flavors. Post-fermentation, the wines were kept on gross lees for a month without sulfuring, then racked and blended. The blend was matured in 1500 L concrete egg-shaped tanks for six months on fine lees, enhancing textural complexity before bottling.

The nose is enticing with pear drops, mango, fennel, and ripe figs complemented by a hint of waxy lanolin from the Semillon.
