Vinification:
The Merlot grapes for this vintage were carefully selected from vineyards in Franschhoek (72%) and Stellenbosch (28%). The fruit was hand-harvested and meticulously sorted at the winery to ensure only the best quality grapes were used. This attention to detail is crucial in preserving the integrity and flavor of the wine.
During vinification, the grapes underwent fermentation on the skins with regular pump-overs to enhance color extraction and ensure the development of elegant tannins. The wine was then aged in wood for 21 months, achieving a subtle oak influence that complements, rather than overwhelms, the natural Merlot characteristics. Notably, a portion of 2018 Merlot (6%) was blended into the final product, adding depth and complexity to the wine.
