Vinification:
The Merlot grapes for this vintage were carefully selected from vineyards in Franschhoek (72%) and Stellenbosch (28%). The fruit was hand-harvested and meticulously sorted at the winery to ensure only the best quality grapes were used. During vinification, the grapes underwent fermentation on the skins with regular pump-overs to enhance color extraction and ensure the development of elegant tannins.
