Vinification:

Processing: After cooling, the grapes were crushed and pressed, and the free-run juice was allowed to settle overnight. This method ensures a clear, high-quality juice for fermentation.
Fermentation: The settled juice was transferred into second-fill French Allier oak barrels. Half of these barrels were inoculated with selected yeasts to control the fermentation, while the other half underwent spontaneous, wild fermentation. This dual approach combines the reliability of inoculated fermentation with the complexity and uniqueness of wild fermentation.
Malolactic Fermentation: About half of the wine underwent malolactic fermentation, softening the acidity and adding to the wine’s creamy texture.
Aging: The wine was aged on its lees for 7 months in the same barrels, a process known as “sur lie” aging. This technique enhances the wine’s body and adds subtle yeasty and toasty nuances.
