The Capensis Fijnbosch Chardonnay seeks to showcase the pinnacle of purity from a singular site within the Stellenbosch District, and is only produced by our winemaker, Graham Weerts, during exceptional vintages.
While our flagship wine, Capensis Western Cape Chardonnay, is sourced from specific vineyard sites across the Western Cape, fruit for this wine is sourced exclusively from the “Flowers” block on the estate Fijnbosch vineyard.
Planted at nearly 600m, this block is home to the highest planted vines in the Stellenbosch District.
Capensis Chardonnay
The ancient soils, dramatic landscapes and historic vineyards of Stellenbosch, Overberg and Robertson are the foundation for this chardonnay, which honors the greatness of South Africa.
Winemaker Graham Weerts has carefully selected the finest Chardonnay vineyards within the Western Cape to create this expressive wine.

This vineyard was planted in 1978. It was picked in 2 batches for ripeness and freshness.
Grapes were hand sorted before destemming under CO2 to open top fermenters. Cold soak on the skins for 2 days prior to the start of fermentation with wild yeast; one punch down daily during fermentation to keep the cap submerged; cool fermentation at 11-13C; pressed after two weeks on the skins(total) using a traditional basket press and transferred directly to barrel; partial malolactic fermentation, 7 months in a mixture of French and American oak. 3 rackings prior to bottling.

The journey of The Grande Provence Amphora wine began when the winemaker decided to import two 400L clay amphorae from Manetti Gusmano and Figli from Florence, Italy, with seven generations of experience in crafting their superb vessels.
A small block of Chenin Blanc (33 years old) in Franschhoek was selected and only the very best yellow, sun exposed bunches were picked to maximise the health, flavour and aromatic expression of the wine.
